Unlocking Specializations requires a minimum skill level of 25 in that profession. Secondary Skills (Fishing and Cooking) do not have specialization trees. Gathering profession trees improve gathering yields, give better chances of collecting rare items, allow gathering while mounted, and even give one gathering profession a small crafting component.
